Each Grand Vintage at Moët & Chandon expresses the cellar master’s interpretation of the year, and the 76th vintage of 2015 is certainly one for the books. October’s TasteMaker dinner presents four cocktails crafted with Woodford Reserve served alongside five autumnal Ruth’s Chris courses:

Amuse Bouche: Kentucky Berry Fizz

We’re already off to the races with this first cocktail, trading traditional gin for Woodford Reserve bourbon, which boasts over 200 detectable tasting notes! Almond-flavored orgeat, lemon juice, and muddled raspberries round out the drink’s flavor profile, while club soda creates the fizz. This effervescence pairs beautifully with our charbroiled oyster topped with Cajun butter and Bienville breadcrumbs.

First Course: Run for the Rosés

Inspired by the unofficial Kentucky Derby moniker, our Woodford Reserve rye whiskey cocktail combines spice and tobacco notes with a vanilla-strawberry-rhubarb purée. As the name implies, rosé bubbles also make an appearance, along with pressed basil. In between sips, savor our pork belly in a rhubarb barbeque sauce, garnished with toasted sesame seeds and crispy onions.

Second Course: Kentucky Barrel Rush

For our next course, we break out the Woodford Reserve double-oaked bourbon. The distillers deeply toast and lightly char the second oak barrel to give the bourbon its decadent flavors of dark caramel and vanilla. To make the cocktail, we add peach cream liqueur, lime juice, spiced brown sugar, black walnut bitters, and rose water.

As for the food pairing with this course, we went with a Kentucky Derby favorite: burgoo served with cornbread. Similar to Irish or Mulligan stew, burgoo features a variety of meats, vegetables, and beans to complete a savory fall dish.

Main Course: Café Reserve Old Fashioned

What libation pairs better with steak than an old fashioned, especially one that showcases Woodford Reserve straight wheat whiskey? Its cocoa nib notes helps it meld with the rest of our old fashioned’s ingredients: coffee liqueur, chicory-ginger syrup, and Mexican chocolate bitters. We also infuse our prime strip steak with Woodford and coffee, as well as top it with coffee bacon jam. On the side, enjoy soufflé-like spoonbread filled with Brussels sprouts and smoked ham.

Dessert Course: Warm Praline Bread Pudding

Last but not least, our signature bread pudding with whiskey sauce gets an exciting twist with Woodford pecan syrup, praline crunch, and vanilla ice cream. If you’re still thirsty, wet your whistle with our coffee and tea service.

About Villa Antinori and Stag’s Leap Wine Cellars: Worlds Collide

In 1385, Giovanni di Piero Antinori became a member of the Florentine Winemakers’ Guild, and his descendants have continued to uphold Tuscan wine traditions ever since. Marchese Niccolò Antinori created the Villa Antinori label in 1928 as a special tribute to the family home.

Stag’s Leap Wine Cellars, on the other hand, traces its history back a mere five decades in Napa Valley. During the famous 1976 Judgment of Paris, the California winery’s Cabernet Sauvignon topped a group of hand-picked Bordeaux wines in a blind tasting, putting Napa on the map.

Now, our pairing of these Old World and New World wineries was no accident; there is a connection. Last year, Marchesi Antinori acquired Stag’s Leap Wine Cellars from Ste. Sangiovese-led, this red blend is as Tuscan as it gets, boasting a flavor profile of dark fruits, cedar, tobacco, and spices. Alternate sips with bites of our veal osso bucco ravioli, swimming in a demi-zinfandel reduction and finished with parmesan and chives.

Entrée: Stag’s Leap Wine Cellars “Artemis” Cabernet Sauvignon

Named after the Greek goddess of the hunt, this Cab Sav with notes of berries and dark chocolate illustrates the importance of grape picking. One sip will reveal that Stag’s Leap chose the cream of the crop. Of course, we serve this Cabernet with a Ruth’s Chris filet, slathered in espresso barbecue butter. Featured Tequila Cocktails on the Casamigos Dinner Menu

August’s TasteMaker dinner presents four cocktails crafted with Casamigos tequila served alongside five chef-inspired courses:

Amuse Bouche: Casa NOLA

To start the evening, we gave a New Orleans classic, the Pimm’s cup, a tequila twist. Casamigos Blanco takes the place of gin alongside club soda and lemon juice, while black salt and fresh fruit garnish the rim. At the same time, snack on a tetela: grilled corn masa dough filled with black beans, shredded quesillo, and tomatillo relish and then topped with Mexican crema.

First Course: Sueño Tropical Fizz

Another Casamigos Blanco creation, this cocktail features pineapple-cucumber fresca, fresh lemon juice, agave, and club soda. Alternate sips with bites of the tortita ahogada, a Jaliscan handheld that directly translates to, “submarine sandwich.” We fill the Guadalajaran sourdough bread with pork carnitas and refried beans and serve it swimming in hot sauce.

Second Course: Cristalino Citrus Margarita

What kind of tequila tasting event would this be without a margarita? This one showcases the Casamigos Cristalino, aged in white oak barrels and then filtered in charcoal to retain the notes of the cask while intensifying the flavor of the agave. The filtration process also removes the golden color of the reposado, resulting in the tequila’s crystal-clear appearance—hence the name. To make the margarita, we add fresh orange and lime juice, salted agave, and a spritz of orange blossom water. Sip and savor with our birria taco of chicken and lamb, served with Mexican rice and fried beans.

Entrée: Sparkling Añejo Sunset

And of course, the evening wouldn’t be complete without a Ruth’s Chris steak, either! Topped with tomato and roasted poblano peppers, this filet comes with potatoes and chorizo plus a Mexican street corn salad. As for the cocktail, Casamigos Añejo takes center stage. “Old” in English, Añejo invokes tradition with a slow fermentation process that gives the tequila a caramel color and flavor. In our sparkling sunset creation, we combine it with amaro for the hue and sparkling wine for the bubbles.

Dessert Course: Cocadas de Chocolate

Last but not least, don’t forget dessert! Our exclusive tequila tasting event ends on a sweet note with these chocolate-coconut treats drizzled with crème anglaise. We’ll say “adios” to tequila for this final course, providing coffee and tea service.
