For our last TasteMaker dinner of 2024, sip on a curated collection of four sparkling selections and feast on five chef-inspired Ruth’s Chris courses:

Amuse Bouche: L’Atelier Rouge Champagne Cocktail

Our wine dinner begins boldly with a cocktail of Moët Imperial and Atelier Vie red absinthe. This fizzy, botanical concoction brings out the flavors of our crostini: an herbed toasted baguette topped with goat cheese, apricot, crushed walnut, and fresh chives.

First Course: Moët Imperial

Up next, experience the greatness of the flagship Moët Imperial all on its own. A vibrant bouquet, sumptuous white fruit flavors, and an elegant mouthfeel indulge the senses. In between sips, cut into our croquette filled with brandade—a rich Mediterranean spread of flaky salted cod and potato purée—and drizzled with citron oil and tartar sauce.

Second Course: Moët Imperial Rosé

The iconic Imperial gets a romantic red fruit update, while still embodying the Moët & Chandon style of brightness, seductive palate, and elegant maturity. At Ruth’s Chris, we’ve paired it with an equally amorous dish of butter-poached lobster in a truffle and caviar sauce. (Chef kiss!)

Main Course: Moët Grand Vintage 2015

Each Grand Vintage at Moët & Chandon expresses the cellar master’s interpretation of the year, and the 76th vintage of 2015 is certainly one for the books. In his eyes, Grand Vintage 2015 demonstrates intensity followed by light. Powerful fruit flavors from a top-tier harvest of red-skinned grapes give way to fresh, floral nuances on the finish.

Of course, this awakening wouldn’t be complete without a Ruth’s Chris filet! We’ve finished this one with a Champagne-roquefort crust, accompanied by fondant potatoes and ratatouille.

Dessert Course: French Apple Tart

Last but not least, our dinner ends on a sweet note with an apple tart, dressed with an apricot glaze, vanilla bean ice cream, and caramel tuile served alongside our signature coffee and tea service.

If you’re a whiskey enthusiast, then you’ve likely heard the Woodford name. But did you know that the Woodford Reserve Distillery is at the epicenter of bourbon’s history? The distillery earned the designation of National Historic Landmark because the first-ever fine bourbon was crafted on its land way back in 1812. Without a doubt, no one captures the storied past of bourbon better than Woodford Reserve.

Using a grain recipe—also known as a mash bill—of 72 percent corn, 18 percent rye, and 10 percent malted barley, Woodford Reserve’s flagship bourbon expertly balances sweet, spice, and nuttiness. After an extended fermentation and distillation via both pot still and column still methods, the whiskey is carefully batched and then matured in bespoke white oak barrels. Featured Whiskey Cocktails on the Woodford Reserve Dinner Menu

October’s TasteMaker dinner presents four cocktails crafted with Woodford Reserve served alongside five autumnal Ruth’s Chris courses:

Amuse Bouche: Kentucky Berry Fizz

We’re already off to the races with this first cocktail, trading traditional gin for Woodford Reserve bourbon, which boasts over 200 detectable tasting notes! Almond-flavored orgeat, lemon juice, and muddled raspberries round out the drink’s flavor profile, while club soda creates the fizz. This effervescence pairs beautifully with our charbroiled oyster topped with Cajun butter and Bienville breadcrumbs.

First Course: Run for the Rosés

Inspired by the unofficial Kentucky Derby moniker, our Woodford Reserve rye whiskey cocktail combines spice and tobacco notes with a vanilla-strawberry-rhubarb purée. As the name implies, rosé bubbles also make an appearance, along with pressed basil. In between sips, savor our pork belly in a rhubarb barbeque sauce, garnished with toasted sesame seeds and crispy onions.

Second Course: Kentucky Barrel Rush

For our next course, we break out the Woodford Reserve double-oaked bourbon. The distillers deeply toast and lightly char the second oak barrel to give the bourbon its decadent flavors of dark caramel and vanilla. To make the cocktail, we add peach cream liqueur, lime juice, spiced brown sugar, black walnut bitters, and rose water.

As for the food pairing with this course, we went with a Kentucky Derby favorite: burgoo served with cornbread. Similar to Irish or Mulligan stew, burgoo features a variety of meats, vegetables, and beans to complete a savory fall dish.

Main Course: Café Reserve Old Fashioned

What libation pairs better with steak than an old fashioned, especially one that showcases Woodford Reserve straight wheat whiskey? Its cocoa nib notes helps it meld with the rest of our old fashioned’s ingredients: coffee liqueur, chicory-ginger syrup, and Mexican chocolate bitters. We also infuse our prime strip steak with Woodford and coffee, as well as top it with coffee bacon jam. On the side, enjoy soufflé-like spoonbread filled with Brussels sprouts and smoked ham.

Dessert Course: Warm Praline Bread Pudding

Last but not least, our signature bread pudding with whiskey sauce gets an exciting twist with Woodford pecan syrup, praline crunch, and vanilla ice cream. If you’re still thirsty, wet your whistle with our coffee and tea service.

About Villa Antinori and Stag’s Leap Wine Cellars: Worlds Collide

In 1385, Giovanni di Piero Antinori became a member of the Florentine Winemakers’ Guild, and his descendants have continued to uphold Tuscan wine traditions ever since. Marchese Niccolò Antinori created the Villa Antinori label in 1928 as a special tribute to the family home.

Stag’s Leap Wine Cellars, on the other hand, traces its history back a mere five decades in Napa Valley. During the famous 1976 Judgment of Paris, the California winery’s Cabernet Sauvignon topped a group of hand-picked Bordeaux wines in a blind tasting, putting Napa on the map.

Now, our pairing of these Old World and New World wineries was no accident; there is a connection. Last year, Marchesi Antinori acquired Stag’s Leap Wine Cellars from Ste. Michelle Wine Estates, which purchased the latter in 2007. The Antinori family holds Stag’s Leap in high regard and looks forward to infusing their deeply rooted family values into the brand.

Our September TasteMaker dinner features two whites and two reds from each winery, all served alongside exceptional Ruth’s Chris cuisine:

Amuse Bouche: Villa Antinori Toscana Bianco “White Super Tuscan”

Firstly, we open with Villa Antinori’s Tuscan white made with Trebbiano grapes, displaying notes of golden apples, pineapples, and bananas. These fruity flavors pair well with our tempura shrimp and diced pears, served with a honey soy sauce for dipping.

First Course: Stag’s Leap Wine Cellars “Karia” Chardonnay

Derived from Greek, “Karia” means graceful, a word that describes this Chardonnay to a T. Its fruit flavors of citrus and melon complement our savory rosemary-crusted chicken topped with a smoked strawberry marinara sauce.

Second Course: Villa Antinori Rosso Toscana “Super Tuscan”

Sangiovese-led, this red blend is as Tuscan as it gets, boasting a flavor profile of dark fruits, cedar, tobacco, and spices. Alternate sips with bites of our veal osso bucco ravioli, swimming in a demi-zinfandel reduction and finished with parmesan and chives.

Entrée: Stag’s Leap Wine Cellars “Artemis” Cabernet Sauvignon

Named after the Greek goddess of the hunt, this Cab Sav with notes of berries and dark chocolate illustrates the importance of grape picking. One sip will reveal that Stag’s Leap chose the cream of the crop. Of course, we serve this Cabernet with a Ruth’s Chris filet, slathered in espresso barbecue butter. On the side, enjoy baked potatoes au gratin, roasted artichokes, and wild mushrooms.

Dessert Course: Dark Chocolate Crème Brûlée

What steakhouse dining experience would be complete without dessert? Riding on the coattails of the Cabernet, our dark chocolate crème brûlée closes out the meal. Instead of wine for this final course, we’ll provide coffee and tea service.
