About the Wagners: One of Wine’s Most Influential Families

The Wagner family released the first Caymus wine in 1972, but their Napa Valley roots extend far deeper. Descended from a long line of local farmers dating back to the 1850s, Charlie Wagner and his wife, Lorna, used their decades of experience working with the region’s soil to hone their winemaking skills.

Today, their son, Chuck, runs Caymus Vineyards with the help of his adult children, Charlie and Jenny. Their masterful production of Cabernet Sauvignon has especially earned the family acclaim in Napa and beyond.

Featured Wines on the Caymus Vineyards Dinner Menu

July’s TasteMaker dinner presents four Wagner Family wines served alongside five chef-inspired courses:

Amuse Bouche: Caymus Conundrum White

First, we begin with this bright and exotic white blend from the Wagner family’s Conundrum label. Chardonnay, Sauvignon Blanc, Semillon, and Viognier bring notes of citrus and stone fruits to the table. The latter makes this wine pair particularly well with our roulade of chilled spicy shrimp, apricot and mango chutney, and rosemary-infused honey.

First Course: Caymus Mer Soleil Chardonnay

Created by young Charlie, this creamy Chardonnay boasts bold flavors of lemon squares and baked croissants while maintaining a natural acidity. Alternate sips with bites of our croquettes filled with chicken, char-fired romaine hearts, and romaine oil.

Second Course: Caymus Vineyards California Cabernet

Up next, we introduce the Cabernet Sauvignon varietal, with the grapes sourced from some of the best vineyards throughout the state. This dark, rich selection wonderfully complements our cocoa-roasted lamb medallion in a red currant and blackberry demi glace over roasted fennel.

Main Course: Caymus Cabernet Sauvignon

Now, we take Cab Sav up a notch with the brand’s most renowned bottle. Ripe with tannins, the Caymus Vineyards Cabernet Sauvignon is a perfect match for our Ruth’s Chris filet with a chimichurri butter crust. We round out the course with aged balsamic heirloom tomatoes and baby yellow potatoes in an avocado ranch sauce.

Dessert Course: Chocolate Cream Pie

No steakhouse meal would be complete without a decadent dessert! Our exclusive dinner ends on a sweet note thanks to a chocolate cream pie topped with espresso crémeux, vanilla bean crème anglaise, and a chocolate tuile garnish. A perfectly sweet finish to a night out.

Rombauer Vineyards & the Joy of Wine

If you’re a foodie, then you’re likely familiar with The Joy of Cooking, Irma Rombauer’s internationally renowned cookbook. The last name is certainly no coincidence; Irma’s great-nephew founded the vineyard! In 1972, Koerner Rombauer and his wife, Joan, moved to Napa in 1972 with their two kids, two horses, and five dogs in tow.

Eight years later, the couple officially established Rombauer Vineyards. Another four years later in 1984, they released their first California-style Chardonnay and Cabernet Sauvignon wines to the public. Guided by their expertise and enthusiasm, the Rombauer family has continued to produce the finest wines from their chosen varietals ever since.

Featured Wines on the Rombauer Vineyards Dinner Menu

When you partake in this exclusive dinner, you’ll have the special opportunity to experience a wide range of Rombauer wines, along with five chef-inspired courses:

Amuse Bouche: Rombauer Sauvignon Blanc

Firstly, we start with an refreshing Sauvignon Blanc. Bright, citrusy sips complement our chef’s pan-roasted sea scallop atop a crispy yucca cake, surrounded by a sea of ginger-cardamom cream and vanilla-carrot purée. A garnish of toasted pepitas adds extra crunch.

First Course: Rombauer Vineyards Chardonnay

After resting in oak barrels, the Carneros Chardonnay tastes of ripe peach, vanilla, and baked pie crust. Such sweet flavors balance out our savory potato leek soup topped with chive cream and prosciutto brittle.

Second Course: Rombauer Vineyards Zinfandel

Up next, this Zinfandel with just a dash of Petite Sirah brings notes of dark fruits and spices to the table. Our blackened spring lamb exhibits similar flavors, thanks to a blackberry demi glace.

Main Course: Rombauer Vineyards Cabernet Sauvignon

Of course, we can’t skip the vineyard’s flagship Cabernet Sauvignon—or the Ruth’s Chris filet! This robust California Cab accentuates our signature steak, crusted with boursin cheese. To round out this powerhouse pairing, you’ll enjoy a spring vegetable risotto and brussels sprouts.

Dessert Course: Rombauer Jam Cake

Last but not least, dessert ends our meal on a sweet note. This Rombauer jam cake comes finished with brown sugar icing, vanilla bean chantilly cream, fresh berries, and powdered sugar. Sip on your choice of coffee or tea with this scrumptious treat.

Learn More About the Prisoner Wine Company, Our Featured March Winery

As our Tastemaker dinners resume for 2024, Ruth’s Chris Steak House looks forward to celebrating noteworthy winemakers and distillers. This March, we start off with the Prisoner Wine Company. Known for rule-breaking blends, this modern California winery certainly isn’t held prisoner by tradition. On the contrary, Chrissy Wittman and her team use grapes from more than 100 growers—including several unusual varietals—to create captivating wines with a cult following.

Are you intrigued yet? For $130 per person plus tax and tip, join us for a multi-course meal paired with selections from the Prisoner Wine Company. Together, we’ll savor every sip as we delve into a world of defiantly distinct wines.

Prisoner Wine Company and the Rebirth of the Red Blend

Inspired by Spanish painter Francisco Goya’s Le Petit Prisonnier, Wittman founded the Prisoner Wine Company in Napa Valley with a mission to break the chains of oppression and embrace creativity. Over 20 years ago, she combined some of California’s best and rarest grape varieties into the Prisoner red blend. Its release caused quite a rumble in the wine industry, and upscale American red blends have resurged in popularity ever since. In addition, Wittman uses the Prisoner Wine Company platform to drive prison reform in the United States!

Featured Wines on the Prisoner Wine Company Dinner Menu

When you join us for this exclusive dinner, you’ll have the unique opportunity to experience the vastness of the Prisoner Wine Company lineup, along with five chef-inspired courses:

Amuse Bouche: Blindfold Blanc de Noir

Firstly, we begin with a white-pressed Pinot Noir blend that also includes small amounts of Viognier and Gewurztraminer. Light, citrusy sips complement our chef’s colossal crab salad drizzled with a Champagne vanilla dressing.

First Course: The Prisoner Chardonnay

This full-bodied, oaky Chardonnay blend brings sweet flavors of baked apple and crème brûlée to balance out our savory carrot-ginger bisque.

Second Course: The Prisoner Cabernet

Up next, this Cabernet blend features tasting notes of dark fruits, vanilla, and nutmeg. The wine’s robust mouthfeel helps it stand up to our beef short rib finished with beurre rouge atop a cauliflower purée dusted with carrot powder.

Main Course: The Prisoner Red Blend

Of course, our dinner wouldn’t be complete without the flagship Prisoner wine — or a Ruth’s Chris steak! Five red varietals all come together in this iconic blend. Enjoy alongside our filet mignon topped with espresso barbecue butter and served with beer-battered onion rings and truffle mashed potatoes.

Dessert Course: Zinfandel Poached Pear

For our last course, the wine is in the dish itself rather than in a glass! Poached in Zinfandel wine, the pear comes topped with vanilla ice cream, candied walnuts, and blue cheese crumbles and is served alongside your choice of tea or coffee.

For the Wagner family, winemaking is in their blood. Since Chuck Wagner founded Caymus Vineyards with his parents in 1972, the Wagner family has called Napa Valley home, developing techniques for farming grapes and producing fine American wines. More than fifty years later, their business remains entirely family-run, and two of Chuck’s children, Charlie and Jenny Wagner, now work alongside him and are helping to expand the Wagner Family of Wines to include such brands as Conundrum, Mer Soleil, Red Schooner, Emmolo and more.

The Wagner family’s collection of premium California wines has long held a coveted place on the Ruth’s Chris wine list.  Discover for yourself why Caymus is heralded as an iconic American winery.  Enjoy their Cabernet Sauvignon, a legacy favorite, and try something new from the acclaimed Wagner Family portfolio of award-winning wines.

Host a Virtual Dinner Party

Technology makes it easy to see the faces of the ones you love when real life circumstances make it difficult to see each other in person. You may live far from children and grandchildren or are in quarantine at home. Maybe you’re worried about traveling or live alone and just need to see a friendly face after so much time apart. Whatever your circumstances, you can take matters into your own hands and do something as simple as throwing a dinner party over Zoom!

Cook one of our favorite recipes together – like Crab Cakes, Barbecued Shrimp or our famous Sweet Potato Casserole – or order carry out or delivery from your local Ruth’s Chris Steak House. The most important thing is that you’re all spending time together via video chat.

Here are the steps to take to ensure everyone has a fun evening enjoying dinner together:

  1. Send out invitations. You can go casual and start a group text or more formal and send out invitations via companies like Evite or Paperless Post.
  2. Choose a day and time and stick with it. You can even make it a regular weekly or monthly occurrence.
  3. Make it fun – choose a theme, have people wear funny hats or a shirt from their favorite football team, etc. It’s your time together, so make the most of it.

Invite everyone to come online and then enjoy each other’s company while you eat. And perhaps the best part of it all? You don’t have to cook and clean for a large number of people!
