Your basic answer choices are: rare, medium, and well done. A rare steak is partially raw inside with a seared outer layer. On the other end of the spectrum, a well done steak is cooked all the way through with a charred crust.

As you can infer, medium is the happy middle between the two, boasting a warm pink center. If you’d like your steak cooked between two levels of doneness, you can order it medium rare or medium well.
